Mighty Meatballs & Honey Mustard Sauce (Gluten Free)


One of the main reasons many of us look forward to the Super Bowl is the excuse to have a party. Here in the South, parties and good times are usually centered around food, so it's fun to create fun foods that all your friends and family will like. These Mighty Meatballs score points for being a winner that everyone who tastes them enjoys.

These little meatballs are perfect little appetizers for a party, but they make great every day snacks, the main entree of a meal, can be served on a sandwich, or serve them with your favorite pasta and spaghetti sauce.


Do you need to eat gluten free foods? You can enjoy this recipe as long as you use certified gluten free oats. Every now and then, I'm asked how these are different than normal oats.

Well......technically oats are oats. However, "regular" oats may be grown next to wheat or other grains that have gluten or they may be processed on the same machinery gluten grains have been run through. Certified gluten free oats are not grown or processed near grains with gluten. To be safe, those with celiac disease or other gluten sensitivities should only use oats clearly marked as gluten free.

Regardless of the type of oats you use, I hope your family and friends will enjoy these meatballs as much as I do.


Mighty Meatballs
With Gluten Free Option
 
Printable Recipe

1 1/2 pound ground beef
1 egg (beaten)
1/2 cup quick cooking oats (use gluten free oats if needed)
1 tablespoon fresh onion (finely chopped)
2/3 cup shredded Mexican cheese blend (or any shredded yellow cheese)
1 teaspoon Herbs de Provence
2 tablespoons Half and Half
1/4 cup ketchup
1 teaspoon salt
1 teaspoon pepper
1 tablespoon Dijon mustard

1. Preheat oven to 375.

2. Place all ingredients in a bowl and mix until well combined. Form into any size meatball, big or small. Smaller meatballs take less time to cook if you are in a hurry and are easier to serve at parties. Be careful not to overwork the mixture, otherwise meatballs will be tough.

3. Place meatballs in a baking dish and bake at 375. Cook time depends on the size of the meatballs, but small meatballs take approx. 20-25 minutes. When meatballs are brown, take them out of the oven.

Serving Suggestion: These Mighty Meatballs are great served with sauces such as bottled ranch dressing or spaghetti sauce. I also make my own Homemade Honey Mustard Sauce that literally takes minutes to prepare.


Homemade Honey Mustard Sauce
Gluten Free
 
Printable Recipe

5 tablespoons mayonnaise (can use low fat or no fat)
2 tablespoons honey
1 tablespoon yellow mustard
pinch of salt and pepper

1. Mix all ingredients in a small bowl, then put in a serving dish.

2. Flavor can be changed depending on your preference. For a sweeter sauce, add more honey. For a creamier sauce, add more mayonnaise. If you want a tangier sauce, add more mustard.
