Sugar Free Chocolate Pudding (Low Carb & Gluten Free)


My family loves chocolate, and we enjoy having desert for a treat. However, when Mom was recently diagnosed with diabetes, we realized many of the desserts we normally have were not acceptable in her new diet.

I've been experimenting with recipes and made this Sugar Free Chocolate Pudding that everyone in our family enjoys. Rich chocolate in a bowl....what's not to love?

If you are craving chocolate, this recipe is very simple and only takes a few minutes to prepare.

Patience has never been my greatest virtue and I love warm pudding anyway, so I usually enjoy it right after it's made. However, it is best if you chill it a few hours. Either warm or cold, this pudding is very yummy!

Whether or not your family and friends are on a restricted diet, I think they will enjoy it too. It will make a nice treat for Valentine's Day or any day for snack or dessert.


Sugar Free Chocolate Pudding
(Sugar Free, Low Carb, & Gluten Free)

1/3 cup corn starch
1/3 cup cocoa powder
1/2 teaspoon salt
1 1/2 cup sugar substitute (or sugar)
4 cups 2% milk
1 teaspoon vanilla extract

1. Combine corn starch, cocoa powder, cornstarch, and salt in a pan. Whisking constantly, add milk a little at a time until all ingredients are combined.

2. Cook on medium heat, stirring constantly until thick.

3. Remove from heat and stir in vanilla.

4. Pour into one medium size bowl or 4 individual size serving dishes. Chill for at least 2 hours or until pudding is set.

Pudding will look like this after it's been chilled.

Optional: If you can have a little sugar in your diet, add a dollop of whipped cream and a cherry. You may also choose to add some unsweetened baker's chocolate shavings to the top. Yum!

Of course this recipe can be made as regular pudding by replacing the sugar substitute with regular sugar.

YUM -- I love chocolate pudding. I am thinking that egg yolks instead of the cornstarch will thicken and reduce the carbs to next to nothing -- planning to try this soon ;)

Chocolate pudding has to be one of my favorite sweet snacks. I haven't tried making it before and always eat the store bought ones. I'll have to try it since it's easier that I thought it would be!
