White Chocolate Coconut Truffles (Gluten Free)


I remember the first time I had truffles. The summer before I entered 5th grade, my Mom and two of her friends went on a trip around Europe. Mom brought us back gifts, including an assortment of chocolate truffles for my brother and me.

Since then, truffles have been one of my favorite candies. I don't have them very often, so it's a real treat when I do. This past Christmas, Mom surprised my brother and me again with some White Chocolate Coconut Truffles she made, which reminded me of those first delicious truffles I had so many years ago.

If you have never made candy before, don't be intimidated because these truffles are very easy to make by using your microwave, mixing bowl, and spoon.

 
White Chocolate Coconut Truffles
Gluten Free
 
10 ounces white chocolate baking squares
4 ounces cream cheese (room temperature)
1/4 cup sweetened shredded coconut
1/4 teaspoon imitation rum extract
1/2 teaspoon heavy cream
1/2 cup white chocolate chips (melted)
Sprinkles (Optional)
 
1. Heat white chocolate baking squares in the microwave until softened, but not melted.

2. Combine all ingredients EXCEPT white chocolate chips and sprinkles. Form this mixture into bite size balls.

3. Melt white chocolate chips and dip each ball into the chocolate. If you want sprinkles, shake some on the truffles before the chocolate hardens. Place truffles on waxed paper and keep in the refrigerator until ready to serve.

These look great--thank you for sharing them! My sister-in-law and my nieces have to be on gluten-free diets so I've been gathering good recipes for when we're together during the holidays. (Nothing is worse than eating an amazing dessert while your niece eats a not-so-great gf donut...I made them gf cookies this year instead.) I'm going to pin this and make it next time I see them!

Just wondering how the insides are at room temp. Does it stay solid? I'm thinking about shipping them.

Keep in mind the main ingredients are cream cheese and milk, both which need refrigeration. The cream cheese will soften in warmer weather, but as far as I know they will maintain their shape if left out for a long time.

However, considering the spoiling factor, I would be afraid to keep them out of the fridge for days if it takes that long to ship.

I probably would not ship them in fear of giving someone food poisoning.
