It is nice to have recipes that are quick and easy to prepare, yet tasty enough that our families will love. Dijon Chicken is one of the recipes I turn to when I'm short on time. All you need to do is cook the chicken and rice, then make a simple sauce to pour over it. This meal can easily be made in 30 minutes or less.
Dijon Chicken
Gluten Free 30 Minute Meal
Olive oil
2 cloves garlic (crushed)
3 tablespoons butter
2 tablespoons Dijon mustard
1 tablespoon capers
2 tablespoons cornstarch
2 cups chicken broth
1. Brown chicken in olive oil. Cover and cook until tender. Remove chicken to a platter and cover. Drain any liquid in the pan.
2. To make the sauce, combine the last 6 ingredients in the pan. Stir constantly while heating on medium to medium high heat until sauce is to your desired thickness.
Serving suggestion: Cook some rice according to the package instructions, substituting chicken broth for water. This gives the rice more flavor. Once rice is cooked, serve Dijon Chicken over rice. I serve this dish with Roasted Root Vegetables.

I'm always looking for new ways to cook chicken breasts, and this recipe looks wonderful! I love all the flavors you've incorporated, especially the mustard. I can only imagine how good it is when the rice soaks up some of the gravy!! It looks really easy, too. :)
