Low Fat Sausage & Cheese Omelet (Low Carb & Gluten Free)


Are you keeping up with your resolution to eat healtheir meals this year? I'm trying to keep my resolution, but breakfast is always the hardest meal for me. Normally, I do not have an appetite early in the morning and am usually too sleepy to think of healthy choices. It's so much easier just to grab something that isn't exactly the best thing for my body.

I have found it is easier for me to have a healthier breakfast if I have a few recipes I really like, so I don't have to put a lot of time or effort into a healthy meal. This Low Fat Sausage And Cheese Omelet is one of my go-to recipes for a simple, yet delicious breakfast or light lunch.

Eggs and sausage both have protein, but they can be high in fat. However, it is easy to adapt recipes you love by switching to healthier ingredients. This Low Fat Sausage and Cheese Omelet is a great way to enjoy eggs and sausage with a lot less fat than a traditional omelet.

Sometimes we think eggs are only for breakfast, but this meal can also be served for brunch, lunch, or even dinner depending on what you serve with it. If you can eat fruit on your diet, a simple fruit salad with a variety of melons is a nice way to balance the meal.


Low Fat Sausage & Cheese Omelet
Low Fat, Low Carb, & Gluten Free

Printable Recipe

1/2 cup Egg Beaters
2 precooked turkey sausage patties
Approx. 1/4 cup low fat shredded cheddar cheese
Olive oil
salt and pepper to taste
Your choice of herbs or green onion for garnish (cilantro, parsley, chives, etc.)

1.Put a drizzle of oil in a small skillet and cook sausage until it is warm and brown. Drain it and then crumble it into bite size pieces.

2. Clean skillet with a paper towel. Add another small drizzle of oil in the pan. Once it is heated, pour in the Egg Beaters. Add a pinch of salt and pepper to suit your taste.

3. When egg beaters are almost set, add 1/4 cup cheese and the crumbled sausage to the middle of the omelet. Fold omelet into thirds.

4. Move the omelet to a plate. Top with a sprinkle of cheese and your choice of chopped herbs.

This is such a pretty plate--all the colors and textures. I know what you mean. Breakfast options are often way too sugary and/or full of fat. This is a great option.
