Sugar Free Blueberry Cobbler (Regular, Gluten Free & Low Fat Options)

 
Pies and cobblers are my Dad's favorite desserts, so he is always happy when we have some kind of fruit cobbler on the menu. It's easy for us to enjoy it without guilt when it is sugar free.

Mom and I have made this recipe many times either for our family or for social gatherings. It is easy to show how much you care by adapting this recipe to fit someone's dietary needs. We've made this with regular flour for those with no dietary restrictions, but it is easy to adapt for those who are on a gluten free or low fat diet.


 
Sugar Free Blueberry Cobbler
Regular, Gluten Free, and Lower Fat Options

Printable Recipe

1 (16 ounce) package frozen unsweetened blueberries
1/3 cup Ideal sugar substitute
1 teaspoon fresh lemon juice
1 cup self rising flour ~OR~ Gluten Free Bisquick
1/4 cup Ideal brown sugar substitute
1 stick butter (Can use Smart Balance or any butter substitute to reduce fat)

1. Preheat oven to 375.

2. In a small baking dish, mix blueberries, sugar substitute, and lemon juice.

3. Mix flour or Gluten Free Bisquick and brown sugar substitute in a small bowl. Cut in 1/2 stick of butter with a fork until butter is in small pieces.

4. Sprinkle the flour mixture over the berries and dot the top with the remaining 1/2 stick of butter.

5. Bake at 375 until golden brown and bubbly.

Serve alone or with sugar free ice cream or frozen yogurt.

This looks delicious, Shannon! I'm going to have to give your gluten free version a try. I like cobblers, too, but haven't had it since I went gluten free about 5 years ago.

I always just hated sugar subs until I discovered IDEAL...we use it all the time now. I love the brown sugar as much as the white. I am having a hard time finding the white Ideal..
ANYway, I am going to make your cobbler...I bought fresh blackberries yesterday so will use them....AND, I have ice cream standing by in the freezer...:)
