Many of us associate turkey with Thanksgiving, but it is a great protein to enjoy year round. My family often has a whole turkey or just a turkey breast in the freezer. Unless it's slathered with gravy and served with dressing, I do not like turkey very much, which is not a good thing when you have turkey for days at a time. This made me experiment with different recipes and flavors to go with turkey. Not too long ago, I tried a new (to me) way to enjoy turkey by making tacos.
This recipe is a fun way to sneak extra vegetables in your diet. It's also lower in fat than traditional beef tacos, making it a healthy way to enjoy one of my favorite foods.
Turkey And Butternut Squash Tacos
Gluten Free And Healthy
Printable Recipe
1 1/2 cups cooked white meat turkey (chopped)
1 1/2 cups butternut squash (Find peeled, seeded, and diced squash in the produce section)
1/4 cup onion (finely chopped)
3 (or more) teaspoons taco seasoning
1/2 cup Swiss cheese (diced or grated)
1 or 2 avocados (sliced)
Juice of one lemon
Salt and pepper to taste
2 tablespoons olive oil
Corn tortillas
1. Warm corn tortillas according to package instructions.
2. Heat olive oil in a medium size skillet. Add onions, butternut squash, and taco seasoning. Cook about 8 minutes or until onions are opaque and squash is tender. Stir a few times during cook time to coat all ingredients with the taco seasoning. Season with salt and pepper to taste.
3. Chop turkey and add it to the vegetables.
4. Peel, pit, and slice avocado, then squeeze lemon juice on top of the slices to prevent browning.
5. To assemble tacos, spoon some of the turkey mixture on half the tortilla shell, then add a few slices of avocado on top. Fold tortilla over and serve with salsa or taco sauce if desired.
