Dinners can get pretty predictable at my house because I normally serve chicken quite often. That can get a little boring, so I try to make family meals more interesting by serving other main dishes once or twice a week. Since my family also likes fish, it has become another staple ingredient in our diets. I serve it every few weeks baked with a little oil and a few spices. This Breaded Oven Baked Fish is a nice alternative to give the fish a slightly different flavor and a crunchy coating.
This is another great 30 Minute Meal that can be served on nights when you need a quick, but healthy meal to put on the table. It can also be changed easily to fit your family's dietary needs. If you are avoiding gluten, use gluten free breadcrumbs.
Are you watching your carbs? Each serving of fish only has 1/8 a cup of breadcrumbs per person. You may be able to use whole wheat or low carb breadcrumbs or just omit the breadcrumbs and sprinkle all the spices over the fish for a tasty, yet filling meal.
Breaded Oven Baked Fish
Low Fat with Gluten Free and Low Carb Options
Printable Recipe
1/2 pound white fish fillets (tilapia, cod, etc.)
1 tablespoon lemon juice
1 tablespoon light mayonnaise (May use low fat mayonnaise)
1/2 cup fresh breadcrumbs (Use regular breadcrumbs, whole wheat crumbs for low carb, or gluten free crumbs for your dietary needs. Breadcrumbs may also be omitted.)
1/8 teaspoon onion powder
1/4 teaspoon black pepper
2 pats butter (melted)
2 tablespoons fresh parsley (finely chopped)
Cooking spray
1. Preheat oven to 375. Spray a baking pan with cooking spray and put fish in the single layer inside the dish.
2. Mix lemon juice and mayonnaise. Spread over the top of each fish fillet.
3. Combine onion powder, pepper, and breadcrumbs. Evenly pat crumb mixture over top fish.
4. Melt butter and evenly distribute over the fish, then sprinkle fish fillets with parsley.
5. Cook at 375 for approx 20 minutes or until the fish flakes with a fork. Cook time depends on thickness of the fish.
